For the production and cultivation of liquid sourdough, through special electro-stirrers and timed stages, which guarantee a product of constant and safe quality. An automatic temperature control system allows the achievement of the optimal pH, ensuring the ideal maturation of the sourdough. The fermentation is therefore totally controlled by an automatic cooling system managed by PLC.
